How To Cook The Ny Strip Meat Cut To Make It Tender

The New York strip meat cut is naturally tender, and it becomes much more succulent when cooked quickly over dry heat. Cooking this cut at high temperatures produces a good crust, while the interior remains tender. The sealed exterior helps retain flavor and moisture. Use a meat thermometer to avoid overcooking, cooking it to a reading of 145ºF for a juicy cut, 160ºF for a cooked cut and 170ºF for a well-cooked cut. Allow the meat to rest at least 3 minutes before serving. Letting the meat rest helps to reabsorb the juices, ensuring a tender and juicy steak. When you buy this cut of meat, look for a filet with a good marbling or fat, which will let you know that it is a cut full of flavor and that will be tender.

Prepare the steaks

Take the steaks and remove them from the refrigerator about 45 minutes before cooking and allow them to reach room temperature.

Season the fillets with some marinade, liquid or dry. The acid marinates denature the muscles of the flesh, so you must use them carefully and only for a short time. Most dry marinates do not affect the texture of the meat.

Rub both sides of the fillet with vegetable oil. Regardless of the cooking method you choose, the oil lubricates the meat and prevents it from sticking.

Grill

Cook the steak on a hot grill over the direct heat until the base is browned, about 4 to 7 minutes.

Using tongs, flip the meat, to avoid piercing it, turn the meat only once, allowing a good crust to form at the base.

Cook the steak to the desired cooking point, or until the thermometer reads 145° F for a juicy steak, as recommended by the USDA. The temperature will continue to rise by about 5 degrees during the cooking time, so take this into account when removing the meat from the grill.

Roast

Preheat the rotisserie and use a tray. Use gloves for the oven when moving the tray.

Place the steak on the hot pan and place it in the oven under the broiler, about 4 inches below the fire.

Use tongs to flip the meat when the top begins to brown, that is, about 3 or 5 minutes after cooking begins. Continue cooking the meat until it reaches the desired cooking point.

Fry in pan

Preheat the oven to 425° F and preheat a skillet suitable for the oven over a high heat and then reduce this heat to medium power. Place the steak in the pan using tongs.

Cook for 4 to 5 minutes, until the base is browned. Turn the steak helping with a pair of tongs.

Move the pan to the preheated oven. Cook the meat for approximately 5 minutes, or until it reaches the desired cooking point. Allow the meat to rest for at least 3 minutes before serving.

Advice

Exact cooking times depend on the thickness of the meat and the heat you use.

Warnings

Use oven gloves when handling hot pans.
